In the southern areas of Reggio Emilia, of strong farm extraction, there has always been the tradition of killing pigs in the winter for the production of cold cuts for family use. The key characteristic is in-house slaughter that allows the first choice of the most suitable pork for processing; preference is given to smaller farms, who are run by people who are still linked to traditional feeding methods, and secondly it allows for more accurate processing, far from industry standards and avoiding unnecessary stress to meat that will remain in-house. Starting from processing the live animal, we have come to produce all the typical cold cuts of our area, form salamis to coppa, bacon, then on to cooked cold cuts such as head cheese and zampone. Every part of the pig is used, as it used to be on the farm.
