It is an aged cheese that maintains a balanced not sharp flavour and not spicy, and its long aging lowers and decreases the concentration of animal protein.

Served in flakes, also accompanied by balsamic vinegar, Parmigiano Reggiano is a great appetizer for the most demanding palates or as a perfect sauce for pasta, rice and soups.

     It also has two marks on the cheese wheels: "Reggiana Breed" property of the ANABoRaRe and "Vacche Rosse" (“Red Cows”), sold for use and applied by the individual producers concerned.





Over 30 months of ageing (mature)

This cheese is the richest in nutrients, even seasoned remains softer and less dry, crumbly and slightly grainy. The flavor and complex aromas. The notes of spices and dried fruit are predominant.
